Istrian olive oil is internationally acclaimed for its exceptional quality and distinctive flavour, often referred to as the region’s “liquid gold”. The tradition of olive cultivation in Istria dates back to ancient Roman times, and today it is a cornerstone of the local agricultural economy. The region’s mild Mediterranean climate, characterised by hot, dry summers and mild, humid winters, provides ideal conditions for olive growing. The rocky soil and coastal breezes further enhance the quality of the olives, resulting in an oil rich in polyphenols and antioxidants.

It is predominantly produced from native olive varieties such as Buža, Istarska bjelica and Rošinjola. These varieties give the oil a unique flavour profile, typically intense and fruity, with notes of green grass, artichoke and a gently peppery finish. The oil is produced using traditional methods, from hand-picked and cold-pressed olives, in order to preserve their nutritional and sensory qualities. Olive oil is a staple of Istrian cuisine, used in everything from marinades and dressings to frying and baking, and it plays a key role in enhancing the flavour of local dishes.
